Cauliflower In Cheese Sauce

120gm cheese, grated 1 large cauliflower 30gm butter 30gm plain flour 300ml/half a pint of milk a pinch of salt and of black pepper a pinch of grated nutmeg

(Serves 4)

  1. Take the leaves off the cauliflower, then cut out the core. Cut the rest into four pieces.
  2. Melt the butter in a pan over a low heat. Add the flour and stir it with a wooden spoon to make a smooth paste.
  3. Cook the mixture gently for a minute, then take the pan off the heat. Stir in the milk, a little at a time.
  4. Put the pan back on the heat. Let it cook over a low heat for 5-10 minutes, stirring from time to time.
  5. Meanwhile, heat a large pan of salted water. When it boils, cook the cauliflower for 5-6 minutes, until tender.
  6. Tip the cauliflower into a colander and stand it in a sink to drain. Put the cauliflower into an ovenproof dish.
  7. Stir most of the grated cheese into the sauce to melt. Season it with a pinch of salt, pepper and grated nutmeg.
  8. When the cheese has melted, pour the sauce over the cauliflower and sprinkle the rest of the cheese on top.
  9. Turn on the grill. Put the dish under the grill for a few minutes, until the top starts to bubble and turns brown.
