Feijoa cake
75 gm butter
1 cup mashed feijoas
2 eggs
1 cup brown or raw sugar
1 tsp vanilla essence
1 tsp baking soda
½ cup milk
1 tsp baking powder
2 cups flour
1 tsp cinnamon or mixed spice to taste
- melt the butter
- stir in the feijoa
- stir in eggs, sugar, and vanilla essence
- warm the milk and add the baking soda and add to mixture
- sift the flour, spice, and baking powder into the wet ingredients and mix
- pour into a greased and baking paper-lined 20cm cake tin
- bake at 180°C for 50 minutes.
- ice with cream cheese icing if wished
Cream cheese icing
200 gm Cream Cheese
200 gm Icing Sugar
1 Tblspn butter
some lemon juice
- beat cream cheese until soft
- add icing sugar, lemon, and butter
- blend until smooth
