Curried Sausages And Rice
2 sausages per person
oil
1 Tblspn mild curry powder (to taste)
1 Tblspn flour
1 apple, diced
1 tin tomato pieces
1 tin pineapple pieces
½ cup raisins, sultanas, or currants
optional
1 onion, finely sliced
1 potato diced
- cut sausages into chunky pieces
- add oil to wok or large frypan
- brown sausages
- brown finely sliced onion
- add extra oil and brown flour and curry powder
- add tomato and pineapple pieces, including juice of both
- add apple and dried fruit
- simmer for 30 minutes
- add boiling water as needed to keep sauce liquid
- serve with rice
