Christmas Cake
280g butter
280g sugar
5 eggs
340g flour
2 tsp mixed spice
230g currants
110g raisons
230g sultanas
110g mixed peel
110g glace cherries
110g blanched almonds
pinch of salt
1 lemon
- cream butter and sugar
- mix in eggs one at a time
- mix dry ingredients in a bowl and fold gradually into mixture
- add a little milk to make a stiff dropping consistency
- place a tray on bottom rack, and cake on next rack on newspaper with newspaper tied round
- cook in cool oven 120°C for 6 hours.
