Fajitas(pronounced fa-heetas) serves 4
Coat chicken, onion, and peppers with two tablespoons of oil. Cook onions and peppers over a high heat in a heavy based frying pan for 5 minutes until beginning to brown. Remove from pan. Sprinkle seasoning mix over the chicken, add to pan, and stiry fry for 5 minutes until meat fully cooked. Add onions and peppers and quickly fry until heated through. Spoon into centre of warmed tortillas together with 2 or 3 teaspoons of salsa and soured cream, roll. Quesadillas(pronounced kay-as-de-yas) starter or light lunch
Spread sauce or salsa over half the tortilla, add cheese and spring onions and fold in half to form a D shape. Cook until cheese melts and tortilla turns lightly golden brown - about 2 minutes per side. Cut into triangles and serve with guacamole and soured cream Enchiladas(pronounced en-chee-lah-dahs) serves four 800gm filling (Chilli con carne, shredded chicken, cheese and onions), Enchilada sauce, 100gm grated cheddar cheese, Sour cream and chopped onions to granish
