120gm cheese, grated
1 large cauliflower
30gm butter
30gm plain flour
300ml/half a pint of milk
a pinch of salt and of black pepper
a pinch of grated nutmeg

- Take the leaves off the cauliflower, then cut out the core. Cut the rest into four pieces.
- Melt the butter in a pan over a low heat. Add the flour and stir it with a wooden spoon to make a smooth paste.
- Cook the mixture gently for a minute, then take the pan off the heat. Stir in the milk, a little at a time.
- Put the pan back on the heat. Let it cook over a low heat for 5-10 minutes, stirring from time to time.
- Meanwhile, heat a large pan of salted water. When it boils, cook the cauliflower for 5-6 minutes, until tender.
- Tip the cauliflower into a colander and stand it in a sink to drain. Put the cauliflower into an ovenproof dish.
- Stir most of the grated cheese into the sauce to melt. Season it with a pinch of salt, pepper and grated nutmeg.
- When the cheese has melted, pour the sauce over the cauliflower and sprinkle the rest of the cheese on top.
- Turn on the grill. Put the dish under the grill for a few minutes, until the top starts to bubble and turns brown.
