Spotted Loaf
500g flour
1 tsp baking soda
1 tsp salt
100g sultanas
1 egg
1½ to 2 cups milk
- preheat oven to 220°C
- mix flour, baking soda, salt, and sultanas in a bowl
- mix egg and 1 cup milk separately before adding to mixture
- fold in flour and add milk until dough soft, but not sticky and wet
- mix gently and quickly and do not overmix
- roll dough on a floured surface and pat until about 5cm heigh
- score top into quarters
- bake at 200°C for 30 to 40 minutes
- serve fresh
