Date And Feijoa Cake
100 g softened butter
cup sugar (150 g)
1 egg
1 cups flour (250 g)
1 tsp baking powder
1 tsp baking soda
1 cup chopped dates
1 cup mashed Feijoas
2 tblspn milk
- preheat oven to 180°C
- grease a 18cm square tin and line the base with baking paper
- beat butter and sugar until light and creamy
- stir in egg
- sift flour, baking powder and baking soda
- fold dry ingredients into creamed mixture
- stir in dates, feijoas, and milk
- place mixture into tin and bake for 45 minutes, or until a knife inserted in the centre of the cake comes out clean
- leave tin for 10 minutes before placing on a wire rack to cool
- when cool ice with lemon icing and garnish with lemon zest
