Slow-roasted Quinces

Slow-roasted Quinces

  • 1kg or 4 quinces
  • 1&freac12; cup white wine, or water
  • 3 cups sugar
  • heat over to 150°
  • wash and quarter quinces
  • place in one layer in a baking dish
  • pour in liquid
  • sprinkle sugar over the top
  • cover tightly
  • bake for 4 hours, until juice is rich deep red
  • serve warm or chilled, with juice

Serves 6 to 8
