Feijoa Jam
1 kg chopped feijoas
½ cup water
4 cups sugar (800 g)
zest and juice of one lemon optional
1 tsp ginger optional
- place feijoas in a jam pan or a large, wide saucepan
- add water
- bring the mixture to a boil over medium heat and cook until fruit is soft - this will take about 30 minutes
- add optional lemon and ginger
- add warmed sugar and stir until it dissolves
- bring jam to the boil, boil without stirring for one hour, or until the mixture reaches setting point
- pour jam into jars heated to 90°C and seal
Makes approximately 900‑1200ml, or three 400ml jars, of jam
