Quince Syrup
3-4 quince skins and cores
1 cup caster sugar
1 cup hot water
- place water and sugar into a small put and stir
- add quince
- cover and set heat to medium
- simmer gently for 35-45 minutes until the syrup is deep pink
- let mixture cool
- strain through a fine seive into a sterilised jar
- store in the fridge
- makes 1 cup
Use for example in yoghurt, hot over lemon cake, or in a cocktail
