Fudge Pudding
1 cup standard flour | |
1 tsp baking powder | Topping |
2 tblsp cocoa | ½ cup brown sugar |
¾ cup sugar | 1 tablespoon cocoa |
50 gm butter | 1 cup hot instant coffee |
½ cup milk |
1 tsp vanilla essence |
- preheat oven to 180°C
- grease a 5 cup capacity ovenproof dish
- sift flour, baking powder and cocoa into a bowl, stir in sugar
- melt butter and milk in a saucepan over a low heat
- remove from heat, stir in essence
- add mixture to dry ingredients, mix well
- spread evenly over base of dish
- mix topping ingredients, sprinkle over pudding, carefully pour coffee (or hot water) over pudding, do not stir
- bake for 40 to 50 minutes, serve with warm cream
