Feijoa Pudding
1 cup feijoas peeled and chopped
1 cup flour
1 tsp baking powder
cup sugar
1 egg
3 oz butter melted
tsp lemon rind (optional)
- combine flour and baking powder and sugar in a bowl
- combine beaten egg and melted butter in another small bowl
- add the egg and butter mixture to the dry ingredients all the while mixing it in
- continue mixing until it is all mixed in and then add the feijoas
- bake in a covered oven dish, which has been lightly greased with butter, at 180°C for 30 mins
- remove lid and bake for another 5-10 mins until top is light brown and bounces back when pushed down and sides are just shrinking from sides of dish
