Quince muffins
100 g butter
1½ cup grated raw quince or poached quince
2 eggs
¾ cup sugar
2 tsp baking powder
2 cups flour
milk to mix (or fresh lemon or orange juice)
Topping
1 tsp ginger
1 Tblspn sugar
- grate raw quince, skin can be left on, or chop poached quince
- melt butter in a bowl
- add quince and stir
- add unbeaten eggs and combine
- fold in dry ingredients
- add liquid to achieve a soft consistency
- spoon into muffin pans
- mix ginger and sugar topping and sprinkle over muffins
Bake at 200° for 10 to 15 minutes.
Makes 12 standard, or 24 mini muffins
