Fruit Cobbler
4 large peaches or other soft fruit, or two 400 gr tins fruit
Cobbler
1½ cups flour
1 cup sugar
100 gm melted butter
2 tsp baking powder
½ cup milk
1 egg
1 tsp cinnamon
- preheat oven to 200°
- grease an ovenproof dish
- wash the fruit, then quarter, removing stones or pips
- slice the fruit and place in bowl with half the sugar and half the cinnamon

- in a large bowl combine the remaining dry ingredients
- in a pot whisk together melted butter, milk, and egg
- stir liquid ingredients into dry ingredients to form a stiff batter
- spread half the batter in the dish, add the sliced fruit, then cover with the remaining batter
- sprinkle with a little sugar
- bake for 40 to 50 minutes until springy and golden
- dust with icing sugar to serve
