Gingernut biscuits

1 cup flour 125 g butter, softened ¼ cup brown sugar 3 Tblspn golden syrup 1 tsp baking soda 1 Tblspn boiling water 3 tsp ground ginger

  • cream butter, sugar, and golden syrup until light and fluffy
  • disolve baking soda in the boiling water, add to creamed mixture
  • sift flour and ginger together, add to creamed mixture
  • roll tablespoon fulls of mixture into balls and place on a greased oven tray
  • flatten with a floured fork
  • bake at 180° for 20 to 30 minutes or until golden

Gingernut biscuits

250 g plain flour 250 g castor sugar ½ tsp baking soda 1 tsp cinnamon 1 Tblspn golden syrup 2 tsp ground ginger 125 g butter 1 egg

  • sift into bowl flour, sugar, soda, cinnamon, and ginger
  • rub in butter until mixture resembles fine bread crumbs
  • lightly whisk egg and add to dry ingredients along with golden syrup
  • work into a firm dough with hands
  • take tablespoonfuls of mixture, roll into small balls, place on lightly greased oven trays
  • bake at 160° for 15 minutes
  • cool on baking racks
