Substitutions

Baking powder

1 tsp baking powder = ⅓ tsp baking soda + ⅔ tsp of cream of tartar

Butter

the same amount of margerine, or
250 g butter = 220 ml oil

Cornstarch

Double amount of all purpose flour

Egg[1](approve sites)

1 tsp cornflour or custard powder mixed with ¼ cup of water, or
2 Tblsp water with 1 Tblsp oil and 1 tsp baking powder mixed well

Pouring cream

Use an equal measure of evaporated milk

Self raising flour

1 tsp baking powder to one cup of flour

Sour cream

1 cup milk and 1 Tblsp lemon juice or white vinegar stirred through and allowed to stand for 5 minutes to sour

Fan assisted ovens

Fan assisted ovens are usually set approximately 25° C (i.e. approximately 50° F) lower than others and cooking time is reduced by 10 minutes for every hour of cooking time.
