Feijoa Cake

Feijoa cake

75 gm butter 1 cup mashed feijoas 2 eggs 1 cup brown or raw sugar 1 tsp vanilla essence 1 tsp baking soda ½ cup milk 1 tsp baking powder 2 cups flour 1 tsp cinnamon or mixed spice to taste

  • melt the butter
  • stir in the feijoa
  • stir in eggs, sugar, and vanilla essence
  • warm the milk and add the baking soda and add to mixture
  • sift the flour, spice, and baking powder into the wet ingredients and mix
  • pour into a greased and baking paper-lined 20cm cake tin
  • bake at 180C for 50 minutes.
  • ice with cream cheese icing if wished

Cream cheese icing

200 gm Cream Cheese 200 gm Icing Sugar 1 Tblspn butter some lemon juice

  • beat cream cheese until soft
  • add icing sugar, lemon, and butter
  • blend until smooth
