Quince Muffins

Quince muffins

100 g butter 1½ cup grated raw quince 2 eggs ¾ cup sugar 2 tsp baking powder 2 cups flour milk to mix (or fresh lemon or orange juice)

Topping

1 tsp ginger

1 Tblspn sugar

  • grate raw quince, skin can be left on
  • melt butter in a bowl
  • add grated quince and stir
  • add unbeaten eggs and combine
  • fold in dry ingredients
  • add liquid to achieve a soft consistency
  • spoon into muffin pans
  • mix ginger and sugar topping and sprinkle over muffins

Bake at 200° for 10 to 15 minutes.

Makes 12 standard, or 24 mini muffins
