Fruit Mince Tarts

Short Pastry (1st version)

125 gm of butter ¼ of a cup of sugar 1 egg 1 ½ cups of flour 1 teaspoon of baking powder

  • cream butter and sugar
  • add egg and cream well again
  • add flour and baking powder sifted together
  • roll out
  • bake in a moderate oven until golden brown

Short Pastry (2nd Version)

75 gm of butter 150 gm of flour 50 gm icing sugar pinch of salt 1 beaten egg 1 teaspoon of baking powder

  • rub butter into dry ingredients
  • mix in egg
  • roll out
  • place in refrigerator for 5 to 10 minutes to firm
  • bake for 15-20 minutes at 190 degrees centigrade

Fruit Mince

550 gm of raisins 225 gm each of sultanas, currents, soft brown sugar 125 gm candied peel 550 gm cooking apples (peeled and cored) grated rind of 1 lemon, juice of ½ of it ½ teaspoon of mixed spice ½ dessertspoon of ground ginger ¼ dessertspoon grated nutmeg

Optional: 225 gm shredded suet, alcohol
  • chop all fruits and mix ingredients well together or put through mincer
  • add suet and/or alcohol if desired.
