Quince Syrup

Quince Syrup

3-4 quince skins and cores 1 cup caster sugar 1 cup hot water

  • place water and sugar into a small put and stir
  • add quince
  • cover and set heat to medium
  • simmer gently for 35-45 minutes until the syrup is deep pink
  • let mixture cool
  • strain through a fine seive into a sterilised jar
  • store in the fridge
  • makes 1 cup

Use for example in yoghurt, hot over lemon cake, or in a cocktail
