Perfect Porridge
Macaroni Cheese
Ingredients:
- 1 ½ cups of diamond macaroni elbows
WHITE SAUCE
- 50g butter
- 1 small onion, finely chopped
- ¼ cup campion standard grade flour
- ½ teaspoon dry mustard (optional)
- 2 cups of milk
- 1 cup of grated cheddar cheese
- Salt and freshly ground black pepper to season
TOPPING
- 1 cup of grated cheddar cheese
Siân's Potato Salad
Ingredients:
- 2 potatoes per person
- Mayonnaise
Method:
- Slice potatoes into cubes
- Put potatoes into pot
- Pour cold water into the pot so it covers the potatoes
- Put the pot on the stove and turn on high until water boils
- Turn stove off
- Sieve potatoes and run under cold tap
- Put potatoes in a large bowl
- Put some mayonnaise in the bowl over the potatoes, just enough so that it covers them
- Stir and serve (it tastes better when the potatoes are still warm).
Boiled Sultana Cake
- Cover 400-450g sultanas with water and boil for eight minutes.
- Beat 3 large (7s) eggs or 4 smaller ones with 1 cup sugar until thick.
- Cut 250g butter into drained sultanas and add.
- Sift in 2 cups flour and 1 tsp baking powder
- Add 1 tsp vanilla and 1 tsp essence of choice (almond, brandy, lemon, etc).
- Line a 20cm tin with brown paper and then buttered greaseproof paper,
- Fill tin with mixture and bake in oven for 1 hours at 180°C (or till a knife inserted in middle comes out clean).
- Sometimes 1 hour is sufficient depending on electricity level at the time.
- Leave to cool in tin, and if it is burning too quickly on top, slip a paper bag over the top of the cake till cooked right through.
Lemon or Orange Icing (Optional)
- 2 cups sifted icing sugar
- 1 tsp soft butter
- 2 Tbs orange or lemon juice
Beat together icing sugar, butter, and enough orange or lemon juice to give a spreading consistency.
