1½ cup grated raw quince or [[poached quince]]
2 eggs
¾ cup sugar
2 tsp baking powder
2 cups flour
milk to mix (or fresh lemon or orange juice)

* grate raw quince, skin can be left on, or chop [[poached quince]]
* melt butter in a bowl
* add quince and stir
* add unbeaten eggs and combine
* fold in dry ingredients
* add liquid to achieve a soft consistency
* spoon into muffin pans
* mix ginger and sugar topping and sprinkle over muffins

Bake at 200° for 10 to 15 minutes.
